Hat jemand Erfahrung mit dem Umbau von Rechts- zum Linkslenker? Ich könnte mir vorstellen, dass sich der Aufwand in Grenzen hällt, da es kein Armaturenbrett gibt und vermutlich Nur der untere Teil der Lenkung und die Handbremse und die Pedale getauscht werden müssten. Hat jemand sowas schon mal gemacht?

It is possible, not easy and some drilling into monocoque necessary. KTM guys in Gratz did it for fewue times. From parts you need the RHD steering only.
Es ist möglich, nicht einfach und einige Bohrungen in Monocoque notwendig. KTM Jungs in Gratz hat es für fewue Zeiten. Von Ihnen benötigten Teile der Lenkung nur RHD. -

I have two RHD XBows. One is the track car, the other is a very low mileage (~4k miles) original car. I may sell this second car and was wondering whether it would be attractive to LHD buyers if the cost of conversion is reasonable. Seemed to me that conversion should be fairly simple unlike normal cars - mainly steering and pedal box really.

I forgot the moving plate for the pedal box

For finding the price in € ( including VAT ) you have to divide the price in the internet site by 4.44.
so for exemple in piesektm.ro the price for the moving plate is 4246 / 4.44 you find = € 956
Maybe the moving plate you don't need. I think you can make a small modification to your RHD plate
